Fork it Over: Blueberry-Avocado Salad

This is a salad I whipped up (my my, doesn't that make me sound kitchen-capable? Ha!) with a bit of leftover red onion, chopped tomatoes, avocado, and blueberries from my FFTY delivery over romaine lettuce.



I dressed it with a homemade vinaigrette - 3:1 ratio of olive oil to white wine vinegar, parmesan cheese, and salt & pepper, shaken to mix and poured over my salad right before lunch at work. I'm giving myself an A+ for this salad. Definitely.
