Dinner, deconstructed.

Sometimes you have those days where you just want to eat something comforting, sort of healthy, and super easy to put together. This post is from one of those days. DSC_6417Avocado - mushed with salt, pepper, and lemon.DSC_6429Roasted broccoli - In toaster or conventional oven for 15-20 minutes at 350 degrees, with balsamic, olive oil, and salt & pepper.DSC_6441DSC_6447Baked potato - microwaved at high heat for 5 minutes in paper towel, if still slightly uncooked wrap in aluminum foil and let sit for another five minutes to steam itself, seasoned with salt, pepper, and parmesan cheese. And a little (lot) of butter. DSC_6449DSC_6451DSC_6454DSC_6461Hey, at least there are two things in this meal that are green. Progress people, progress.
